Max McCalman is one of the ‘big cheeses’ in the industry, and a bit of a cheese idol for those of us in the biz. A maître-fromager and award-winning author, he’s currently the Dean of Curriculum at the Artisanal Premium Cheese Centre in New York.
After working in the specialist cheese industry for years and publishing several books on the art of serving and appreciating cheese, Max is a wealth of cheese knowledge.
