Nimbin Valley Dairy lies on a winding country road between Nimbin village and Tuntable Falls in Northern New South Wales. It’s the home of Kerry and Paul Wilson, their three sons and some incredibly content goats and cows. Between them, Paul and Kerry have decades of dairy experience and produce a range of artisan dairy products including some award-winning cheeses.
I spent the day with Paul to learn a little more about his cheese-making philosophy and commitment to locally produced food (and eat some delicious cheeses of course!).
