Pecora Dairy is one of only a handful of sheep cheeseries in Australia. Set in the lush hills of the Southern Highlands of New South Wales, it’s owned and run by Michael and Cressida McNamara – a couple who had a dream to make their own range of farmhouse cheeses.
Between daily milking, cheese-making, regular market stalls, running the farm and raising a family, Michael and Cressida don’t have much spare time – but I suspect they wouldn’t have it any other way – this sort of passion and commitment is the key to amazing hand-made cheese.
